2 for 1 with watermelon.

Welcome to the off season down here in Palm Beach. With the humidity creeping up and the afternoon showers passing through we all need a refreshing, savory cocktail to enjoy. Well, you are in luck. You get two. Using a medium sized red seedless watermelon yielded about 2 1/2 liters of vitamin C and lycopene filled juice to give a healthy light flair to these summer libations.

The first is a slight variation of a recipe I submitted for iS vodka for the New York Bar Show.

iS Splash

2 oz. iS Vodka
1 oz. Fresh Lime Juice
3/4 oz. Organic Agave Nectar
2 oz. Fresh Watermelon Juice
3 Fresh Basil Leaves

Garnish: Basil Leaf

Preparation: Twist and squeeze the basil leaves into a mixing tin with ice to release the oils. Add the iS vodka, lime juice and agave nectar into the tin and shake and strain into a highball glass. Add the chilled watermelon juice into the highball glass last. Stir and serve.

This second recipe was inspired by running out of basil due to the success of the recipe above.

Watermelon Cilantro Margarita

2 oz. Silver Tequila
1/2 oz. Orange Liqueur
1/2 oz. Fresh Lime Juice
1/2 oz. Fresh Lemon Juice
3/4 oz. Organic Agave Nectar
3 sprigs of Fresh Cilantro

Garnish: Sprig of Cilantro

Preparation: Twist and squeeze the cilantro into a mixing tin with ice to release the oils. Add the tequila, lime juice, lemon juice and agave nectar into the tin and shake and strain into a red wine glass. Add the chilled watermelon juice into the red wine glass last. Stir and serve.
